Preparation of Ingredients: Wash and slice tindora and kachri. If using kachri powder, it can be mixed directly with the spices.
Cooking Process: Heat oil in a pan, add mustard seeds and cumin seeds until they crackle. Add onions, green chilies, garlic, and ginger; sauté until golden brown. Add tomatoes, turmeric, coriander powder, and kachri or kachri powder. Cook until tomatoes soften. Add sliced tindora, mix well, and cook until tindora is tender but not mushy.
